Location: Vegetable garden

Origin: native to Russia

Description:

  •  vigorous perennial with spicy hot roots
  • 2-3′ tall

Maintenance:  dig in late fall for best flavor at least two weeks after your first hard freeze;  store in refrigerator or root cellar;  replant small tubers

Preparation: Try letting grated horseradish sit before adding vinegar which “sets” the level of heat

Zone: 3+
